From his first job at The Four Seasons Troon North at Scottsdale to his current position at The Golden Pineapple, Executive Chef Dell Morris’s culinary adventures have taken him all over the world. He has graced the kitchens at several Four Seasons properties, including gigs in Jackson Hole, Wyoming; Vail, Colorado; Palo Alto, California and Nassau in the Bahamas. But, he has always stayed close to his roots.
Chef Morris credits growing up on a farm in small-town Ft. Thomas, Arizona with preparing him for his stellar career. “My grandmother was a great cook and installed the love for food in me,” the chef told us. “She would jar/ preserve everything from the farm and we would use it through the year. This taught me the importance of fresh organic food.”
His love of craft beer and patronage of hot spots such as The Wandering Tortoise, Theodore and Hops On Birch brought him into the orbit of the team behind The Sleepy Whale, and in March of 2020, he joined their team. The Golden Pineapple’s menu boasts a fresh and fabulous Southwest/Baja fusion relying on local specialty shops such as Chula Seafood, Nelson’s, Haden Mills, Nobel Bread, Sweet Republic, Frits Street Fries and Schreiner’s Sausage Company. Brunch offerings range from Chula Oysters with a Pineapple Mignonette through classic Chilaquiles to a Brisket burger, or try the Rum Pineapple French Toast. Start dinner with Nelson’s Tuna Tostada with Fire-Roasted Aji Amarillo Salsa and enjoy the Achiote Chicken with Cilantro Chimichurri, a Stacked Enchilada or Baja Fried Fish with Watermelon Radish and Chipotle Crema. Finish your meal with Mexican Chocolate Cake for just the right touch of rich sweetness.
